Sweet potato and kale breakfast

Serves one:  This little gem of a vegetarian recipe was a complete accident, created from leftovers but it is such a good, filling and nutritious breakfast I wanted to share it with you!

1 small or half a medium sweet potato

Large handful of kale

1 large egg

Ground cumin

Smoked paprika

Salt & pepper

Coconut oil for frying


Cube the sweet potato and fry gently in the coconut oil until it starts to soften.  Scrunch up the kale in your hand to break it down a little then add to the pan with a tbsp of water.  Add the cumin &seasoning and stir.  Put a fitted lid on the pan and allow to steam and sweat until the kale is soft.  Break the egg on top and replace the lid to cook through.  When the egg white is cooked serve up with a sprinkling of smoked paprika.  You could also add mushrooms if you have any of those lurking in the fridge, some chopped bacon and/or pumpkin seeds for some extra crunch and nutrients.  Delicious!
