Easy breakfast pancake

Serves one:  A simple pancake recipe which you can make savoury or sweet.  It takes minutes and will keep you full for hours.


  • 1 heaped tbsp quark (low fat soft cream cheese)
  • 1 heaped tbsp oat bran
  • 1 large egg
  • Seasoning and herbs OR stevia / xylitol for a sweet version (to taste)

Mix all the ingredients together, whipping a little air into your batter.  Fry gently in a little coconut oil until the pancake is cooked through, turn half way.

Lots of ways to serve, including:  bacon, tomatoes, mushrooms, maple syrup, berries and cream cheese, banana and cocoa powder, plus a few seeds or flaked almonds for some additional micro-nutrients.  Do a different version every day of the week – delicious!
